Boyne Mountain Resort has teamed up with Bluestem Farm of East Jordan and Short's Brewing Co. of Bellaire for a Farm-to-Table series beginning on September 11 in Everett's restaurant.
Each Friday, the chefs at Boyne Mountain prepare three-course dinners using produce and meats from Bluestem Farm, a diversified, four-season farm offering certified organic vegetables and pasture-raised eggs and meats, as well as regional suppliers. Each course is then served with a four-ounce pairing from Short's Brewing Co.
The kick-off dinner on Friday, Sept. 11, features a farm fresh salad with arugula and Asian salad greens, pickled radishes, cucumber, carrot, and garlic croutons topped with roasted beet vinaigrette and paired with Short's Space Rock, a light bodied American Pale Ale with prominent floral and orange peel-like hop aromas. The entrée is pan seared Michigan lake trout from John Cross Fisheries served with Traverse City cherry champagne cream sauce, goat cheese whipped potatoes, zucchini and summer squash, and paired with Short's Nicie Spicie, a spiced wheat ale packed with fresh citrus zest and spiced with coriander and a three peppercorn blend. Dessert is a Raspberry Rhubarb Crumble paired with Short's Octorock Cider, a semi-sweet, light bodied cider with delicate pear-like aromas.
Representatives from Bluestem Farm and Short's are on-hand at each event to share information about their products, while diners watch as their entrée is made to order.
Additional Farm-to-Table dinners take place on Sept. 18, Sept. 25, and Oct. 2 in Everett's. Cost to dine is $29 per person and also includes the opportunity to return to the resort and relax with your date with a Day Spa Pass to Solace Spa, a $35 value, included with dinner.
Diners can enjoy the Farm-to-Table experience from 5-9 p.m., and Everett's regular menu is also available.

The series ends on Oct. 9 with an expanded event at Boyne Mountain's Beach House Restaurant on Deer Lake with dinner service at 5:30 p.m. and 7:30 p.m. offering five-courses and live entertainment. Cost is $39 with a portion of proceeds benefitting Bluestem Farm's Help Others Eat Well Fund helping to provide low-income families in northern Michigan access to nutritious foods.
